Steaks

Ingredients:

  • Steaks or chops about 1 thick 
  • Salt, pepper, herbs
  • Cooking oil 
Steps:
  1. Rinse steaks with cold water, then pat dry.
  2. Pour oil into frying pan, preferably stainless steel or cast iron 
  3. Check the sear. After a few minutes, check the underside of the steak to see how the sear is developing 
  4. Cook through. When the cut is well seared, flip it and wait a few more minutes, depending on the thickness of your cut and how long the sear took to develop
  5. Remove the steak just before it is done. Let the meat "rest" for 5 to 10 minutes
  6. Delegaze the pan (optional). Notice the brown bits left in the pan. You can make a sauce out out of them by delegazing the pan with wine or stock and adding flavoring such as butter, herbs, shallot, mushroom, garlic, whatever you wish.

kimchi fried rice

Ingredients:
  1. 1/2 tablespoons sesame oil 
  1. 2 eggs, lightly beaten 
  1. 2 cups steamed kimchi 
  1. 3 tablespoons low sodium soy sauce
  1. 2 green onions, thinly sliced 
  1. 2 teaspoons toasted sesame seeds 
  1. garnish: 1 green onions, thinly sliced 

Direction:
  1. Place oil  into a wok or large fry pan, over high heat 
  1. Pour egg into the pan and gently but quickly cook, stir and break spart into large pieces
  1. Add rice and mix together, about 2 minutes
  1. Pour kimchi with its juice andd the soy sauce over the rice mixture and stir together until all the rice has been well coated, 3 to 4 minutes
  1. Stir in the green onions and sesame seeds and remove from heat 
  1. Top with remaining green onions and serve hot

Burger patties



  1. Start with good meat. Get a butcher to grind beef for you with a 15 % fat content
  2. Place the ground beef in a bowl 
  3. Roughly chop the onion and garlic. Put them in a bowl and mix them together until combined
  4. Add the egg yolk. Season with salt and pepper and mix everything together
  5. Mix it all together 
  6. Create the burgers. Handle the meat as little as possible, so you don't squeeze out the juices
  7. Arrange the burgers on a plate. Cover them with plastic wrap or wax paper
  8. Choose your cooking method
  9. While the burgers are cooking, prepare the toppings
  10. Serve

Kimchi



Ingredients
  • 3 tablespoons sea salt
  • 1 medium carrot
  • 6 cups water
  • 2 lbs Chinese cabbage
  • 6 scallions
  • 1/2 tablespoons minced fresh ginger
  • 1 cup of minced garlic
  • 3 tablespoons of brine shrimp sauce or anchovy fish sauce
  • 1/4 cup of Korean ground dried hot pepper
  • 1 teaspoon sugar
Steps
  1. Dissolve the 3 tablespoons salt in the water
  2. Put the cabbage into a large bowl, a crock, or a nonreactive pot and pour the brine over it
  3. Weight the cabbage down with a plate. Let the cabbage stand for 12 hours
  4. Drain the cabbage, reserving the brine
  5. Remove the brine bag, and cap the jar tightly. Store the kimchi in the refrigerator, where it will keep for months

How to make Ramen



  1. Find a pot that is the right size for the portioning.
  2. Take out two packets of Ramen, and fish out the packet of flavoring.
  3. Put the pot of water on the stove, and set the heat to "High"
  4. Take the two flavor packets from the Ramen, and empty them into the pot
  5. As the water starts to boil, add the noodles.
  6. To make the Ramen seem more like a meal, add chile flakes and stir
  7. Wait for about 3 minutes, than turn the heat off. 
  8. Add in 2 eggs, and push them to the bottom. 
  9. Put a potholder onto the table, and serve the ramen in the pot. 


Sushi




  1. Select 2 types of veggies (cucumbers and carrots) and a fish (for instance artifical cooked crab)
  2. Place about 2 cups of sushi rice in arice cooker and then rinse the rice repeatedly until the rice water is not cloudly
  3. Wash the veggies and place them on a cutting board and cut the carrots in half long wise and then cut them into long skinny strips 
  4. Cut the crab into little strips and make sure they are pretty even in length
  5. Check on your rice. If it is ready , take it out and put it in a dish 
  6. Take a bowl and pour in about two tablespoons of rice wine venegar. You can add more or less depends on your taste buds and how separated you want your grains or rice 
  7. Pour the mixture onto the rice and mix thoroughly by slicing the rice. Add rice wine vinegar if needed to make the grains of rice separate easily
  8. Place the seaweed layer on a bamboo mat and then the bottom third in then roll it up
  9. Roll the bamboo into a long rooll by first folding the bottom third in then roll it up
  10. Cut down the middle of the roll, take each half and place them parallel to each other
  11. Serve and enjoy

Kebab Fruits


  1. Choose which kind of grapes you'll use
  2. Choose 5 different types of fruits
  3. Or feel free to make your own selections
  4. Gather your skewers and fruit 
  5. Decide on a pattern for your fruits to go in 
  6. Stick a grape onto the far end of the skewer
  7. Choose a fruit and add that next to the grape 
  8. Follow this process for the remainder of the skewer
  9. Add one more grape and set this kebab aside
  10. Repeat to make as many kebabs as you need

15 Steps to make spaghetti


  1. Pre measure how much spaghetti you need how many people you will need to serve
  2. Put a pot of cold water on the stove to boil. Wait for the water to come to a hard boil
  3. Pour some salt in the boiling water 
  4. Break the spaghetti in half with your hands over the pot. 
  5. Carefully pour / place the spaghetti in the pot without causing any splashing
  6. Use a fork to stir the spaghetti for a few seconds, then allow the water to return to boil 
  7. Turn the dial down to half way ( like a 5 ) or to minimum and allow the spaghetti to cook 
  8. Stir occasionally and allow the spaghetti to get soft
  9. Taste / crew test the spaghetti to see if it's done
  10. Turn off the burner once the spaghetti is done
  11. Strain the spaghetti in a strainer and then put them back into the pot or a heat resistant bowl 
  12. While the spaghetti is cooking , in a separate pan, pour in some pre made sauce, cover with lid and set it to boil 
  13. Turn the heat down immediately once the sauce starts to boil
  14. Mix some sauce into the spaghetti 
  15. Enoy your meal
